Toddler Approved Chicken Soup Saves the Day

That's right folks! A treasure trove of a meal with only a few ingredients that's your little ones are sure to approve. My daughter literally licked the bowl clean.

I've been in a "soupy" mood lately with all the rain and wanted to find a light meal that didnt require an experiment in the kitchen. We all know less is more when it comes to a recipe so here's the delivery.

Note: I've been obsessed with bok choy lately but it's got a great flavor kick and serves as a great and more nutritious alternative to celery.

Ingredients:
One rotisserie chicken fully cooked (for times sake but you can also crockpot one as well for approximately 3 to 4 hours)
One bunch of carrots
One medium bok choy
One medium onion
4 chicken bouillon cubes
8 cups water
1/2 tsp pepper
1/2 tsp salt

Strip the chicken of all the meat and skin. Cut the carrots into 1/2 inch round slices, the onion into roughly diced 1 inch pieces, and bok choy into 1" pieces. Throw all the ingredients in a large pot and bring to boil for ten minutes. Lower to medium heat and cook for 1-1 1/2 hours until carrots and bok choy are tender.

Serve with a smile and a sippy cup :)


P.S. Yes I realize she is so fashion savvy with two headbands (one of which is being worn as a necklace) and a second necklace.
